My kids are huge fans of this Easy Baked Sandwich and Soup Recipe I created in my poor college days- It’s perfect for those busy nights when you need something warm and filling in only a few minutes, and on a budget!

 I created this for myself and my roommates when we were tight on money, and had only a few minutes to share a meal. It’s simple, and of course, feel free to make this your own and share your variations with me! I’d love to see what you come up with!


6 Oz Sliced Deli Chicken or Turkey

8 Oz Shredded Italian Cheese

4 Tbsp Softened Butter

1 Italian Bread Loaf

2 Tsp Garlic Powder

2 Tsp Italian Seasoning

Family Sized Can Campbells Tomato Soup


Set oven to broil. Prepare soup as instructed in a medium saucepan.

While soup is warming, cut your Italian loaf lengthwise and place halves cut-side-up on a baking sheet. Spread each with softened butter. Sprinkle over garlic powder and Italian seasoning. Broil for 1-2 minutes, or until bread is light golden on top and the edges are crisp. 

Pull from oven and arrange slices of turkey or chicken on one half. Spread a generous layer of shredded cheese over the other half. 

Place back in under the broiler for 1-2 minutes, or until cheese is melted.

Remove and put your halves together while the cheese is still melting. Cut into slices and serve with tomato soup for dipping!


This 10 minute dish is SO perfect for chilly nights when you’re out of energy!

“Soup and Sammies” as we call them at my house are our go-to comfort food. Warm, Filling, Inexpensive and FAST- variations of this recipe can be made with ham & Swiss or thin sliced beef with aujus! 

Make it your own, and include it in your meal planning routine for those busy cool nights!

PS The Italian Loaf with butter and seasoning is GREAT served with any dinner! I love to make this with pasta dishes, soups, and dips- Especially my Crockpot Spinach and Artichoke Dip! Slice it thin and arrange on a plate with your dip for gatherings…
