This Easy 4 Ingredient Chicken and Rice recipe is a classic casserole dish that’s perfect for busy nights! I enjoyed this one growing up- and to my surprise, it’s become a big HIT with my own kids as an easy, tasty weeknight meal!
It’s the end of the week, FINALLY! You’re out of energy. The kids are trudging through the longer weeks of school leading up to the holidays…
The whole family is tired and hungry, and mama,- you’re about to face a mutiny if you don’t get dinner together ASAP!
I usually cut this recipe in half for just the two little kids and I. To do this, use a 9×9 baking dish, ONE can of Cream of Chicken Soup, two chicken breasts and one box of rice…
We usually get 2 meals, since this dish is easily reheated for delicious left-overs!
This cheap, easy recipe makes a great weeknight dinner to whip up in a hurry. But don’t just keep this one for yourself- It’s perfect to bring to friends and family members, (especially at flu season!)
Having dinner guests?- Don’t spend a fortune on groceries! Chicken and rice is cheap and easy, leaving everyone full and satisfied! Best of all, you can mix everything AND bake it IN ONE PAN-less mess! So let’s dig in-
4 Boneless, Skinless Chicken Breasts
2 Boxes Uncle Ben’s Long Grain & Wild Rice
1 Can Campbell’s Cream of Chicken Soup
1 Can Campbell’s Cream of Mushroom Soup
Preheat your oven to 350 degrees. Trim and rinse chicken breasts- for thicker breasts, make 3-4 slices on the underside or tenderize.
In a 9×12 Glass Baking Dish, add Rice with Seasoning Pouch, Soups, and 2 soup cans of water. Stir to combine.
Arrange Chicken in the dish on top of the rice mixture, pressing down to lightly cover- (if left uncovered, the tops of the chicken breasts will become dry in the oven)
Bake for 45-60 minutes uncovered. Let cool before serving!
This is a super simple dinner. Tastes like home, and I only had to wash ONE casserole dish! (That may be my favorite part!) Try Chicken & Rice Casserole this week for your family and let me know how it turns out! I hope this is one less thing for you to have to worry about, mama!
